Celebrate Soup Swap Day the Liberty County Way
Soup Swap Day is a day to spend quality time with family & friends and to share some homemade soup. If you want to celebrate Soup Swap Day the Liberty County way, we suggest making a She-Crab Soup. She-Crab Soup is a rich soup, similar to a bisque, made of milk or heavy cream, crab meat, crab roe and dry sherry. So sit back and pour yourself a glass of that sherry because this soup is going to knock your socks off!
Ingredients:
3 tablespoons butter
1 medium onion, chopped
2 teaspoons all-purpose four
1-quart whole milk
1 lb. fresh lump crabmeat
1/4 lb. crab roe or hard-cooked egg yolk
1/8 teaspoon white pepper
1/8 teaspoon ground mace
2 cups half-and-half
½ cup sherry wine
1 tablespoon table salt
Garnishes: paprika & parsley
Directions
Melt 1 1/2 tablespoons of the butter in a saucepan over low. Add the onion and sauté 3-4 minutes or until softened. Add the remaining 1 1/2 butter to your sautéed onions. Once melted, whisk in your flour. Add your milk stirring constantly until blended. Stir in the crab meat and roe (or yolk). Add white pepper & ground mace then cook for 20 minutes over medium heat. Stir in the half-and-half, remove from heat and stir in the wine & salt. Serve in your favorite bowl with paprika & parsley garnishing!
